HBO already ordered 2 more seasons and want them to start filming asap so there isn't a big gap between S2 and S3. So we are guaranteed the 3rd book at least! They are splitting a storm of swords into two seasons because it is so dense. Which is a good move. Also according to some extras who worked on the second season. They are filming some stuff that happens in Book 3 for the end of Book 2. This is probably for cliffhanger purposes. The fist of the first men scene most likely will be the ending scene for season 2.
